When candy canes originally came out in the 17th century in Germany, they were all white. In the 20th century, they changed to red and white. Why did they change? Peppermint was the chosen flavor because it is similar to hyssop which was used in the Old Testament for purification. Did you ever notice the three red small stripes together? People have said that it represents the Holy Trinity. In the US, the person that made the candy cane popular was Bob McCormack.
